Origin

One country, studied properly

El Salvador is small, volcanic and unusually well suited to specialty coffee. Mineral-rich soils, high elevation and sharp diurnal swings give lots their density and sweetness, while decades of Bourbon, Pacas and Pacamara cultivation have kept heirloom genetics alive here longer than almost anywhere in Central America.

Washed processing remains the backbone, but honey and natural lots from careful producers are now some of the most distinctive coffees in the region — and they take a roast beautifully.
